Harvested by hand in small boxes, divided into several lots of grapes by ripeness, each lot is brewed in small separate tanks, steel & cement, After racking, the wine is placed in cement vats & oak barrels for malolactic fermentation. Refining technique: after the completion of malolactic fermentation, 50% of the wine is refined in barrels & French oak barrels & the rest in cement tanks, for about 12 months. Then the wine is assembled in one tank & bottled after a few months.
