Bottled during the first fermentation. Disgorgement à la volèe after at least 20 months on the lees. Exciting nose, pink grapefruit, wild strawberries, intense & persistent. Strong acidity that balances the exuberant fruit, the final flavor that remains on the tongue. Tasty & refreshing.

Wine is one of the pillars of the Mediterranean diet as an index of well-being & can really be a “healthy habit” bringing benefits day after day, consumed in moderation & above all without chemical additives & adds-on substances. Following the white vinification after cold maceration on the fine lees. Refining in bottle for at least 15 months. Lashing acidity, citrus fruits, aromatic herbs. Revitalizing. With its own natural sediment.

Aged in French oak barrels (50% the first process and 50% the second process) for two years; then in the bottle for an additional two years. Deep ruby red color with garnet hues. Red berries fruit jam, with hints of plum & sweet tobacco sensations; it is full, warm & creamy, with ripe tannins & dark chocolate; the taste is complex yet balanced & consistent with these aromas.

Big brother of Barbera d’Alba, refined in the “Barolo style” that means in French oak barrels (tonneaux) of 7q for 12 months (added designation of Superiore). Ruby with garnet nuances, offers red fruits, blackcurrant & berry, licorice & mature cherry. Rich & harmonious, full bodied, with a very long aftertaste.

 

VALPOLICELLA CLASSICO SUPERIORE ‘16

Harvested by hand in September, the fermentation in stainless steel tanks then left in contact with the grapes to ensure color is extracted from the grapes skins. Pumping twice a day the wine is not filtered, but it is decanted four times & put in in French oak barrels of 30hl, then in second oak barrels passage, where the wine is aged for at least a year. Garnet with a bouquet of pear & red fruits, cherries, & scent of vanilla. The clean taste makes it a very drinkable wine, & easy to pair. Recommend uncorking one hour beforehand & pouring into glasses at temperature of 65° F.

ROSSO VERONESE CLEMENTI ‘15
