Harvested by hand in small boxes, divided into several lots of grapes by ripeness, each lot is brewed in small separate tanks, steel& cement, After racking, the wine is placed in cement vats & oak barrels for malolactic fermentation. Refining technique: after the completion of malolactic fermentation, 50% of the wine is refined in barrels & French oak barrels & the rest in cement tanks, for about 12 months. Then the wine is assembled in one tank & bo ttled after a few months.

The best grapes of the season, selected & harvested by hand in September, are put to dry in small wood boxes, for three to four months to increase the percentage of aromatic and phenolic compounds. Pumping over is carried out twice a day, & delastage is carried out once half way through the fermentation process. They are then pressed, put in stainless steel tanks, where the must undergoes a fermentation for two weeks approximately; it is then decanted four times without filtering; finally put in oak barrels for at least 36 months. Bottled after four/five years. Aging: in French oak barrels of 30hl for at least three years. Deep ruby red, intense color, with ripe red & black fruit bouquet, cherry jam, marasca plum & dried fruits, scent of spices, cinnamon & nutmeg. For its unique flavours it is considered a “meditation wine”.

Elegant & very refined! Bright purple red. The aromas are complex &  require time from opening to manifest themselves in all their splendor: red fruits alternate with hints of pepper & herbaceous aromas typical of the Mediterranean scrub. Rich mouthfeel characterized by a dense tannic texture well harmonized with excellent acidity. Closes with a persistent finish. The “Rivaggi” is a crus with the autochthonous Nerello Mascalese assembled with a small percentage of grenache; a fruitful union, which gives life to a wine with strong aromas, structured, deep flavors & great harmony. This wine will bring the intense experience of the volcanic Mount Etna in each glass.

Bright ruby red, floral aromas & fruity bursts with intense mineral notes. The aromas remind you of a walk through the active geysers at Yellowstone. Fermentation is spontaneous, maceration lasts for about 3 weeks; refinement for 12 months in cement tanks, followed by bottling during the waning moon, without any additives. A balanced & graceful bottle with explosive flavors & scents that remind us of the volcanic slopes of the majestic Etna.

Ballerina Rosso is fresh & elegant, a Nero d’Avola that expresses the territory, a precious witness of our most rooted identity. Ruby red with purple reflections, fruity with intense hints of cherry & blackberry with spice note in closure. Dry, rich & structured with velvety tannins, sapid & persistent.
