Winemaking philosophy

Provolo’s wines represent a perfect fusion between tradition and technology.

As a matter of fact in some unfavorable years some wines like Amarone and Recioto can also “skip the year”.

Drying the grapes is a critical process and the use of a ventilation method and a air processing system for humidity recreates a very similar to the natural drying process.

Vinification and aging occur in an underground area with a constant level of temperature and humidity. Also another very distinctive characteristic of Provolo winmaking technique is to use for concrete tanks partial maturation of red wines.

First aging in barrel can last up to 40 months (see Amarone) followed by a long second aging in bottle. During this time care and control never stop.
